Basically, sake comprises rice, water, and the fermenting agent called koji, resulting in an alcoholic level that usually sits between 13 and 16 percent. And you might be interested to know that the rice used is different from the standard table rice so popular with Japanese food. With my one year anniversary with the Time+Tide team on the horizon, the only drawback has been that the pandemic inhibited all the in-person interaction I really craved. INTRODUCING: The 2021 Longines Legend Divers freshen up heritage looks with modern notes

The heritage trend has definitely saturated the marketplace with virtually every manufacturer looking to their past to create interest in their products. Some do this better than others. With the current ubiquity of the faux-patinated aesthetic, designs have to be pushed even further to stand out. Re-interpretations of heritage designs typically signal that the design … ContinuedThe post INTRODUCING: The 2021 Longines Legend Divers freshen up heritage looks with modern notes appeared first on Time+Tide Watches.

H. Moser & Cie. Introduces the Streamliner Flyback Chronograph Funky Blue

Unveiled just earlier this year, the H. Moser & Cie. Streamliner Flyback Chronograph is compelling inside and out – an uncommon, cushion-shaped “bullhead” case with an integrated bracelet, containing the ingenious, well-regarded Agenhor AgenGraphe movement. A limited run of just 100 watches, the launch-edition Streamliner only recently clinched the Chronograph Watch Prize at this year’s Grand Prix de Horlogerie de Geneve, making it the perfect time to launch of the regular-production variant, the Streamliner Flyback Chronograph Funky Blue. Initial thoughts Original and appealing in its design, the Streamliner was well-received commercially and critically, making the regular-production version inevitable. Almost identical to the original version, the new version differs only in its dial, which is a metallic blue with a fashionable smoked finish. Notably, the blue dial has a radial, brushed finish, instead of the vertical, linear brushing of the launch edition. While the blue dial is quintessential Moser in colour and style, it isn’t as unique as the pale grey dial on the launch edition – which is a good thing, as it helps differentiate the limited-edition original. That said, the blue dial is attractive – and more striking – with the graduated, fume finish giving it more depth than the typical integrated-bracelet sports watch. The Streamliner chronograph has a price tag of US$43,900 – a sizeable number that’s justifiable because the watch stands out f...

Audemars Piguet – The Établisseur, Rehabilitated

This year Audemars Piguet (AP) walked into Watches & Wonders Geneva for the first time in seven years, and it did so carrying a word it had not used in public for the better part of a century. The brand had departed the predecessor of the fair, the Salon International de la Haute Horlogerie (SIHH), in 2019 alongside Richard Mille, declaring its intention to forge direct relationships with collectors through its own channels and AP Houses rather than through the shared theatre of a trade fair. The return to Geneva in 2026, under CEO Ilaria Resta, was already a signal of strategic realignment, but the word it brought with it made the move more interesting: établisseur. The watches it presented — three of them — each made in very limited numbers by a network of named artisans working within and around the Musée Atelier in Le Brassus, were introduced under the name Atelier des Établisseurs, a project AP described in its launch communications as a revival of the collaborative spirit that had driven the watchmaking industry for generations. The établissage system The framing was historically accurate, as far as it went. The établissage system did shape the Vallée de Joux from the late 18th century onward. Farmers working through the long alpine winters crafted individual components like wheels, bridges, and screws in home workshops, coordinated by an établisseur who assembled the finished watch and brought it to market. The Audemars Piguet Établisseurs Gallets hand-w...

The Gübelin Ellipse: The Often Forgotten Patek Philippe and Audemars Piguet Retailer’s Own Timepieces

It took a few years of being a watch enthusiast before I came across my first double-signed watch dial. I remember it was a Universal Geneve White Shadow with the word “Türler” written near the six o’clock position. Having never seen one before, I typed in a quick Google search to see what this had meant and, hours of research later, I came out a new watch collector––one with an eye and appreciation for double-signed watches. Up there with the likes of Cartier, Türler, Tiffany and Co., Mesiter, Trucchi, and other renowned jewelry retailers, Gübelin is a name any collector will frequently stumble upon when shopping for watches of this variety. When I came across this example of a solely Gübelin-branded timepiece, I knew I had to pick it up (especially for the >$100 price tag). This sent me down a rabbit hole of research similar to what the double-signed watches did. I wanted to understand the Gübelin brand and what it did for the world of horology, and I find it only necessary to share what I was able to find with all of you. Brief History of Gübelin Taking roots in 1854, Gübelin started in Lucerne as an independently run watch shop specializing in repairs and sales. The owner and lead watchmaker, Mauritz Breitschmid, would later agree to a partnership deal with young apprentice (and later son-in-law) Eduard Jakob Gübelin, sparking what would become decades of successful international business. As time went on, Gübelin became a powerhouse of the jewelry m...

Business News: Breitling’s House Of Brands Unveils New Executive Leadership With Georges Kern As Group CEO

'House of Brands,' the group of watchmakers including Breitling, Universal Genéve, and the soon-to-be-revived Gallet, announced executive changes that will see the flagship brand led by new leadership, with Georges Kern becoming the group's Chief Executive Officer. Jean-Marc Pontroué, a long-time Richemont executive and the former CEO of Panerai and Roger Dubuis, is the new Chief Executive Officer of Breitling, the group says in a statement. The changes take effect in May.  Georges Kern Georges Kern, who has led Breitling under new ownership since 2017, overseeing a more than doubling of annual sales to above CHF 800 million, according to analyst estimates, and one of the most dramatic turnarounds in modern watchmaking, becomes the new CEO of the House of Brands, overseeing the three marques and their leadership in a newly created role.At Universal Genève, which relaunched this month in the high-end segment in what's likely the most ambitious watch brand return and repositioning in decades, Grégory Bruttin remains Managing Director. Meanwhile, at Gallet, the approachable-priced brand known for its Flying Officer and Multichron models, to be revived in August this year, Erwan Rossignol, who is already leading the team preparing the relaunch, becomes Managing Director. The changes confirm the multi-brand ambitions of the private-equity-backed Grenchen, Switzerland-based company, and provide a structure similar to that of other groups with portfolios of several watch bra...

Audemars Piguet Inaugurates Arc Manufacture in Le Brassus

Audemars Piguet (AP) has formally inaugurated the Arc Manufacture in its historical home of Le Brassus. Designed by de Giuli & Portier of Geneva, the 23,700-square metre building will accommodate 700 employees under one roof - a number that would have been almost unheard of in the days of the historical établissage system. It connects to, and partially wraps around, the existing Manufacture des Forges, which was completed in 2008 and housed around 300 employees - an impressive figure for its time. The expanded manufacture should ultimately help boost production, especially considering it was designed with Industry 4.0 in mind. In other words, it’s a smart factory. This includes a Goods-to-Person (GTP) automated sort and retrieval system which uses 66 robots to pick the needed components, which are then delivered by robotic shuttle. While such systems are already used by high-volume luxury watch brands like Rolex and Omega, few haute horlogerie brands have the volumes to justify such an investment. According to AP, the GTP system saves an average of 15 seconds per operation. But more than scale, the new manufacture should deliver higher quality of product – namely superior reliability and less defects – across AP’s offerings. Like other new manufactures of its type, the Arc is extremely energy efficient as well thanks to 321 metres of electrochromic glass, which can automatically change opacity to regulate the amount of light, and heat, allowed in. The building...

Bi-Retrograde’s Back: Roger Dubuis Hommage La Placide

Celebrating its 30th anniversary this year, Roger Dubuis (RD) revisits its earliest triumph with the Hommage La Placide, a 28-piece limited edition that reimagines the brand’s signature bi-retrograde perpetual calendar. Named for the late Dubuis’ childhood Boy Scouts nickname, the Placide celebrates the classical roots of the Geneva-based manufacture while honouring the design codes that first put RD on the map three decades ago. Faithful to the originals yet refined in execution, the Placide reaffirms the brand’s ability to merge mechanical ingenuity with expressive design - a reminder that beneath its modern flamboyance lies genuine horological pedigree. Initial thoughts Roger Dubuis today is best known for its over-the-top, modern design - skeletonised movements, sharp case lines, and a visual language that often borders on the theatrical. It’s a far cry from the brand’s origins three decades ago, when Dubuis himself was focused on classical watchmaking rooted in Genevan tradition. Paying tribute to those early creations, the Placide reimagines the bi-retrograde perpetual calendar that first established the horloger genevois 30 years ago. The bi-retrograde perpetual calendar was first conceived in the late 1980s, when Dubuis collaborated with Jean-Marc Wiederrecht to develop a novel perpetual calendar mechanism featuring twin retrograde indicators for Harry Winston. It was only in 1995, upon founding his own brand, that Dubuis introduced the complication ...
