I’m fortunate enough to have been to Spain twice, to Seville and to Barcelona in 2018 and 2019. I fell in love with the country, the history, culture, architecture, food and lifestyle, and had wanted to come back ever since. My wife and I are foodies who truly enjoy fine dining and new eating experiences. When we went to Barcelona the first time, I heard of an amazing restaurant called Disfrutar (“enjoy” in Spanish), but was unable to get reservations at the time. Disfrutar has three Michelin Stars and was named the best restaurant in the world in 2024. I tried many times to get a reservation, but they book out one year in advance to the day, and are understandably quite popular. Late one night while watching TV in May of 2024, I randomly went to their website and, lo and behold, was able to procure a reservation for two on Friday, May 9, 2025. Well, that settled it, we were going to Spain in 2025! Spain is a place that we are considering spending a significant amount of time after retirement, so we wanted to use this trip as an opportunity to explore some areas that might be suitable to live/stay part-time in the future. After much research and deliberation, our itinerary was set. We would arrive in Madrid, stay there for five days, take the train to Córdoba for the day, and continue on to Málaga for a five day stay. Zenith and Time+Tide Collaborate on a Third Defy “Surfer” Limited Edition

Zenith has once again partnered with the Australian watch media website Time+Tide on a limited edition Defy. The third watch in the trilogy, which follows the Defy Classic Skeleton Night Surfer from 2021 and the Defy Skyline Skeleton Night Surfer El Primero in 2023 completes the concept of the “Surfer Trilogy” with a bold white ceramic case that incorporates design details from each of the previous watches. It’s definitely an aesthetic change of pace, but taken together, all three watches make a lot of sense as a trio. Prior “Surfer” limited editions have sold out quickly, so if you were after one and missed out, you now have another (final?) chance to snag one.  Each of the previous limited edition Defys in the “Surfer” series have been in micro-blasted titanium cases, making the white ceramic here a stark contrast. Ceramic, though, is arguably the material most associated with the contemporary Defy, whether in the now discontinued Classic line or the new Skyline series. Zenith is one of a small handful of brands that has reached true expert status with this material. Like other Skylines, the case measures 41mm in diameter and is 100 meters water resistant with a screw down crown.  We’ve seen a white ceramic Skyline before, but this new Time+Tide LE, even with a case that has so much presence, is really defined by the dial. Louis Erard & Konstantin Chaykin Bid Farewell to the Time Eater with a Tourbillon

Having collaborated on several iterations of the affordable “Time Eater” regulator, Louis Erard and Konstantin Chaykin now close the chapter on the model with something more complicated. The Time Eater Tourbillon Louis Erard x Konstantin Chaykin tells the time regulator style – retaining the trademark “eyeball” hours from the Russian independent’s Wristmon series – but inside the “mouth” is a one-minute tourbillon. At CHF19,900, the Time Eater Tourbillon is pricier than the earlier time-only models, but still relatively accessible as such things go, thanks to a no-frills, but Swiss, tourbillon movement inside. Initial thoughts I liked the original Time Eater regulator because the design captures the Konstantin Chaykin style but makes it affordable at about a fifth of the price of a Wristmon. The Time Eater Tourbillon is less affordable, but still priced a little less than a Wristmon, so it is still a value proposition. More broadly, it’s a good thing that Louis Erard and Konstantin Chaykin are ending the Time Eater series. After three time-only regulator launches and this tourbillon, the concept has probably reached an optimal point of just enough and not overexploited. Ressence Collaborates with German Artist Daniel Engelberg on a Pair of Limited Edition Versions of the Type 8

Ressence is one of my favorite independent watch brands for a number of reasons. Chief among them, of course, is the novel time telling system invented by the brand, which is unlike anything else in watchmaking. It’s an example of both mechanical ingenuity and a design triumph, and like others who have had a chance to experience it, I’m continually blown away by the intuitive layout of these watches and the creativity in rethinking something as basic as telling the time. Another reason Ressence has such a strong appeal is that this design language has proven to be incredibly flexible, something we’ve observed over the years as the brand has collaborated with a variety of partners on interesting limited edition projects. The Grail Watch release with Alain Silberstein remains a personal favorite, as does their Dubai Watch Week LE from a few years ago (a new limited edition celebrating the 75th anniversary of Ahmed Seddiqi is also pretty great). A pair of new watches made in collaboration with the artist Daniel Engelberg might just be my favorite Ressence limited edition yet. We got a very quick preview of these watches when we met with Ressence at Watches & Wonders earlier this year, and were immediately taken with their bold color palettes and a design that really leans into the brand’s aesthetic while still being wholly unique works.
